Crispy Chicken Wing with Salted Egg Sauce

Frying Flour Batter
Corn Flour | 9g |
Plain Flour | 14g |
Self-Raising Flour | 9g |
Water | 45g |
Salted Egg Sauce
Curry Leaves, plucked and cleaned | 0.4g |
Chilli Padi, cut | 0.2g |
Evaporated Milk | 5g |
Water | 6g |
PLANTA Margarine 2.75kg | 2.5g |
KNORR Chicken Seasoning Powder 1kg | 0.5g |
Sugar | 2g |
Knorr Golden Salted Egg Powder 800g | 2.5g |
Preparation
Chicken Wings
1. In a mixing bowl, mix all the ingredients together and marinate overnight.
Frying Flour Batter
1. In a mixing bowl, mix all the ingredients together and set aside.
Salted Egg Sauce
1. In a pot, melt margarine, stir fried curry leaf and chili padi till fragrant.
2. Add in evaporated milk, water and bring to simmer.
3. Whisk in sugar, Knorr golden salted egg powder and Knorr Chicken Seasoning Powder.
4. Let it simmer for 2 mins.
5. Set aside.
Before Serving
1. Preheat deep fryer to 180 degree Celsius.
2. Coat the chicken with the batter and deep fried the chicken wings for 8mins till it is cooked and golden brown.
3. Drain off excess oil.
4. Heat up salted egg sauce and fold in chicken wings.
5. Ready to serve.
